Shyira, from Rwanda’s Southern Province, rolls in next. Slow dried on raised beds for nearly a month. It brings depth with that unmistakable Rwandan red fruit glow.

Then comes the wildcard Jairo Arcila’s Cinnamon Co-Ferment out of Quindío, Colombia. A riot of spice and sweetness, it melts into the mix with hits of cinnamon sugar, cocoa, and mulled fruit, turning the blend into something festive.

Together, they collide in a rush of festive sweetness and winter fire!
